2 lbs. Penne
about 2 qts. tomato sauce
1 lb. cottage cheese or ricotta
1/2 cup parmesan cheese
2 1/2 - 3 cups mozzarella or mozzarella and provolone cheese
8 oz. cream cheese, softened
2 9x13 pans or a large commercial size pan
Preheat oven to 375 degrees.
Bring a large pot of salted water to a boil and add the Penne. Cook to al dente.
Drain, return to the pan, and toss with just enough sauce to thoroughly coat.
In a bowl, thoroughly mix your cottage cheese, mozzarella, parmesan cheese, and cream cheese.
Stir the pasta and cheese mixture together.
Put some sauce in the bottom of your baking pan(s) and put the pasta on top.
Spoon more sauce over the top. (For variety try topping it with Alfredo).
Bake for 15-20 minutes or until the mixture is bubbly.
Make ahead:
Mix everything together, allow the dish to cool, cover and refrigerate.
When ready to eat, warm in a 350 F oven for 30 minutes or until heated through, stirring occasionally. Uncover and bake a few more minutes.
