1 tablespoon paprika
2 teaspoons dry mustard
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon salt
8-10 filets Firm white fish like cod
About 1/4 cup unsalted butter, melted
Or blackening spice mix
In a small bowl, mix together paprika, dry mustard, cayenne pepper, cumin, black pepper, thyme, and salt.
Sprinkle both sides of fillets with spice mixture, and gently pat mixture onto fish.
Heat an oiled cast iron pan(s) on high heat until hot.
Pour melted butter into a shallow dish.
Place fillets into hot pan(s) without crowding. Spoon melted butter over each fillet.
*Cook until fish has a charred appearance, about 5 minutes. Turn fillets and cook until charred on the other side, about 5 minutes more.
*How long you actually need will depend on the thickness of the filets.
