Bread Pudding

Ingredients

Stale challah, brioche, Pain De Mie (Sandwhich Bread) From Starter/discard, Pan De Muerto from starter, or other leftover bread (rich breads are best), cut into 1-inch cubes (about 9-10 cups)


4 cups milk

3 large eggs

2 cups white sugar

2 tablespoons vanilla extract

1/4 teaspoon allspice

1/4 to 1/2 teaspoon cinnamon


3 tablespoons butter, melted


9x13 pan


Pumpkin:

Stale bread

2 cups milk

3 large eggs

2 cups pumpkin pureé

2 cups white sugar

1/2 cup brown sugar

2 Tablespoons vanilla extract

1/4 teaspoon Allspice

1/2 to 1 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon nutmeg


Directions

Preheat the oven to 350°F.

Place milk in a large mixing bowl and add the cubed bread. Toss to make sure all the bread is wet.

In a separate bowl, whisk the eggs, (pumpkin if you are making that one), then whisk in the sugar, vanilla, and spices. Pour over the bread and milk mixture. Stir gently to combine.

Pour the melted butter into the bottom the pan. Use a brush to coat the bottom and the sides of the pan well with the butter.

Pour the bread milk and egg mixture into the baking pan and smooth out.

Bake at 350°F for 40 to 50 minutes, or until the liquid has set. The pudding is done when the edges start getting a bit brown and pull away from the edge of the pan.
Pumpkin

Serve warm. If desired, drizzle on a simple powdered sugar glaze, cinnamon and sugar, or both.

Leftovers will be okay on the counter overnight, but should be moved to the fridge the next day.
