Potatoes
Oil
Salt
Foil lined, lightly oiled baking sheet
Wash and dice your potatoes. Put in a bowl of cold water as you work. Drain and rinse.
Put the pieces in a pan of cold, salted water. Bring to a low boil and cook until the potatoes are just tender. Keep a close eye on them once it begins to boil because it won't take long.
Drain and let the steam dissipate.
Heat your oven to 450 degrees F.
Lay the potatoes out on your oiled pan and brush with oil.
Bake in oven for 20-30 minutes or until golden brown on the bottom. Turn on broil and cook 5 minutes more or until golden brown on the top.
Salt, if needed, while still hot.
