Large Potatoes (*1)
Coarse Kosher Salt
Vegetable or peanut oil
Large foil lined baking sheet
Medium or large pot
Peel the potatoes, if needed, and cut as desired, putting them in a bowl of cold water as you work. Drain and rinse.
Put the potatoes in a pot of cold, salted water. Bring to a gentle boil and cook until the potatoes are tender.
Drain the fries into a colander and let the steam dissipate.
Heat your oven to 450-475 degrees F.
Oil your baking sheet. Lay out the fries and brush lightly with oil.
Put in the oven and bake for 15-30 minutes*.
Flip the fries, (or at least rotate the pan) and adjust your oven temp if needed. Put the fries back in the oven and bake for another 15-30 minutes*, or until browned and crispy.
Salt if needed.
*The exact amount of time your fries take to crisp and brown is dependent on the type of potatoes you used, the size of your fries, and your oven.
*1 Make more than you think you need in case any break up too much to use as fries after boiling.
*If you have convection roast on your oven, use it!
