1 gal. water, salted
1 1/2 qt. milk
1 cup sour cream
2 lbs. elbow, rotini, farfalle etc. Noodles
2 cups diced ham
1/2 cup butter
8 T. flour
2-3 cups shredded cheddar
Salt and pepper
Hotel pan or two casserole pans
Bring your water to a boil, then add the noodles and cook until just done, 6-14 minutes depending on type. Drain.
In another pan, melt your butter, whisk in your flour, and cook for 3 minutes.
Whisk in the 1 1/2 qt. milk.
Cook, whisking frequently, until thickened. Season as needed.
Sir the sauce, sour cream, ham, and most of the cheese into the pasta, and spread into your pan(s).
Top with remaining cheese and bake at 350 degrees for 10-15 minutes or until the top is lightly browned.
