Hot Wings (baked)

Ingredients

30 wing pieces

8 Tablespoons salted butter

Tabasco sauce


About 1 cup BBQ sauce


1 T. Chili powder

1/2 T. Garlic powder

1/2 T. Onion powder

1/2 T. Salt

1/2 T. Cumin

1/2 T. Paprika

1 tsp. Mustard powder

1/4 cup brown sugar

1 T. Flour

Directions

If your wings are still intact, cut them into pieces at the joints and discard the wing tips (or save in the freezer for stock). Mix up your spices and flour and rub them all over your wing pieces.

Lay them out on a cooling rack on a baking sheet. Put them in the refrigerator uncovered over night and until you are ready to cook. Drying them out will help the skin crisp.

Lay them out on an oiled rack over a foil lined baking sheet.

Heat your oven to 350 degrees F for a convection oven or 375 F for a regular oven.

Bake wings for 30 minutes.

Flip and bake another 20 minutes.

While they cook, melt your butter in a pan.
Whisk in a little Tabasco sauce at a time until you get the flavor you want.

Put your Tabasco sauce mixture in a large bowl.

When the wings are done baking, let sit a few minutes so you can handle them; with gloved hands toss wings to coat and lay them back out on your baking sheet.

Turn the oven up to 375 degrees for a convection oven or 400 for a regular oven, and bake another 10 minutes.

BBQ: Toss the wings with your favorite BBQ sauce, thinned with a little water if needed, instead of Tabasco and butter. If you plan to make both types, you can make the tabasco wings first, then mix your BBQ sauce with the sauce that is left before tossing those wings.
