1 cup milk
4 tablespoons melted butter
2 eggs
1 tsp. vanilla

2 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
10 Tablespoons sugar
1 teaspoon salt
Mix dry ingredients and wet ingredients in separate bowls, then mix dry into wet a little at a time until incorporated.
Drop on hot, greased griddle by 1/4-1/2 cup scoops.
Flip when edges look dry and cook on remaining side a few minutes.
Best served immediately.
Chocolate:
Replace 1/2 cup flour with cocoa powder and add 4 extra tablespoons of sugar.
Fruit or chocolate chips:
Mix dried fruits into your batter.
After putting the batter in the pan, sprinkle on a few pieces of fresh or frozen fruit, or chocolate chips.

*1 You can toss in 1 cup of discarded starter if you have it (per batch). It is not necessary to make any other changes to the recipe.
*Expect there to be possibly be one sacrificial pancake in the beginning, while you get the temperature and consistency correct. If it seems too thin, add a little more flour. Too thick, water.
