Pumpkin Chip Cookies

Ingredients

1 Cup butter, softened

3/4 Cup brown sugar

3/4 cup granulated sugar

1 tsp. vanilla

7 T. Pumpkin

3-4 cups flour

1 tsp. salt

1 tsp. baking soda

2 tsp. Pumpkin pie spice blend

2 cups chocolate chips

Directions

Mix wet ingredients until smooth. Add in the salt, baking soda, and pumpkin pie spice.
Slowly add in the flour, only incorporating the amount needed to get desired consistency. (*1)
You should be able to roll a ball of dough in your fingers, but it should not be dry.

Stir in chocolate chips. Scoop 1 1/2 inch balls onto a parchment lined cookie sheet about 2 inches apart.

Bake at 350 for 8-10 minutes.
The cookies should just look just set, but can be slightly wet in the center. Allow to cool on the sheet 5 minutes before moving to a cooling rack.

Notes

*Moisture in the air and moisture in the pumpkin can affect how much flour you need. If you add 4 cups and it still seems too gooey, refrigerate it for awhile rather than adding more flour. Too much flour will make the cookies taste and feel like flour.
