Quick Pickles

Pickled/Dried/Canned

Ingredients

1 cup water

1 cup vinegar

2 tsp. salt

2 tsp. Dill (optional)

1 T. Sugar (optional)


1-2 cucumbers or zucchinis


jar or container with lid


optional add ins: sliced garlic cloves, sliced onion, other sliced peppers

Description

Good on burgers or BBQ sandwiches when you want some pickle flavor the same day. Try to give them at least 2 hours if you can.

Directions

Combine everything in a saucepan and simmer for several minutes, long enough for the salt, and sugar if using, to dissolve.

Rinse cucumbers or zucchinis and slice into thin coins.

Layer desired items into a jar or container. Pour liquid over, if everything isn't covered, make more brine. Push everything down or agitate it gently a few times as it cools. Once cooled, cover and refrigerate.
Zucchini and Onion

Store in the refrigerator. The brine is strong, so these are best if eaten within a few days.
