2 Cups Buttermilk (*1)
2.5 Cups flour
1 tsp. Baking Powder
1 tsp. Baking Soda
2 Cups sugar
4 tablespoon cocoa powder
1 tsp. salt
1/3 Cup oil
1/3 Cup unsalted butter, very soft
1-2 T. gel red food coloring
1 T. vanilla
4 eggs
This is a very mild flavored cake that needs a stronger flavored frosting with it. Something very mild flavored like a whipped cream frosting will make the cake bland.
It does work well in the Vampire Trifle however, even with its whipped filling, because of the other richer ingredients.
Let your milk come to room temperature.
Prepare your pans and preheat the oven to 350 F (325 if you have a small double oven).
Beat together the butter, sugar, and eggs. And the remaining wet ingredients and mix until smooth.
In another bowl, mix together dry ingredients.
Slowly incorporate dry into wet. Run batter through a sieve into a new bowl to remove any undissolved flour.
Bake for 25-35 minutes, until a skewer inserted into the center comes out clean or a thermometer inserted into the center registers 200F.
Leave the cake in the pan for 5 minutes before turning out onto a cooling rack.
Other colors:
Replace the cocoa powder with flour if the color is light, and use 1-2 T. of whatever colors you want.
*1 If you do not have buttermilk, use whole milk or skim milk + cream mixed with 1 tsp. of vinegar.
