Ingredients

1 whole garlic bulb

olive oil

aluminum foil

Directions

Remove any loose skin. Slice the end off the bulb, exposing the cloves inside.

Sit up in foil, drizzle with olive oil, and close foil. Bake at 400° for 30 minutes.

Open up the foil and let cool enough to handle. Pop or squeeze the soft cloves out of the skin.

Store in a container in the fridge for up to a week. When you need to use the cloves in a recipe, put them on a plate and smash them with a fork before adding.

Notes

*Roasted garlic has a sweeter, milder flavor than raw garlic. As a consequence, you have to use more of it in a recipe than you would raw garlic. But it is much easier to work with and takes less effort.
