Breaded chicken breasts
Brioche rolls
Cajun seasoning mix:
1 T. Salt
2 T. Garlic powder
2 T. Paprika
1 tsp. Black pepper
1 T. Onion powder
1 tsp. Cayenne
2 tsp. Oregano
1 T. Red pepper flakes
Mayo:
1/2 cup Mayonnaise
1 T. Cajun seasoning mix, or more to taste
Lettuce, pickles, tomato slices, or Cole slaw
A good choice for a Mardi Gras meal. The seasoning mix makes a lot and it's likely you'll have the bottle for several years.
Stir together the cajun seasoning mix, and put in a seasoning shaker if you have it.
Whisk together the mayo ingredients and refrigerate until ready to use.
Cole slaw:
1 bag cole slaw mix, 1/2 cup mayonnaise, 2 tablespoons sugar, 1/2 tablespoon vinegar.
To serve, spread each side of a roll with the mayo, place on the chicken, and top with desired toppings. Set out the seasoning shaker for anyone who'd like to sprinkle on more.
Serve with a salad topped with Louisiana Sensation Dressing and King Cake for dessert.
