Sloppy Joes/ BBQ Chicken

Ingredients

1 chopped bell pepper (optional)

1/2 large, chopped onion

Salt and pepper


1 can tomato soup (10oz.)(*1)

1 tsp. Garlic powder

Dash Tabasco sauce

2 T. Brown sugar

1 T. Chili powder

1 T. Vinegar

Pinch of red pepper flakes

1- 1 1/2 cups of your favorite BBQ sauce

Water if needed


Crock pot


2-3 lbs. raw lean ground beef, ground turkey, or ground chicken

OR

3-4 lbs. raw boneless, skinless chicken breasts


Directions

Sloppy Joes (ground meat):

*If the meat is frozen when you start, put it in the crock pot on high by itself with a small amount of water, just until you can start to break the meat up, about 1 hour. Then follow the directions as written.

Put the meat in your crock pot with the other ingredients except the BBQ sauce.

Cook on low until meat is cooked through, stirring periodically to break it up, about 2-3 hours. Add a little water if the mixture is dry.

Put the meat in a strainer over a sauce pan and let the liquid drain off. Return the meat to your crockpot.

Simmer the liquid until desired consistency.
Check the flavor and make any adjustments, then stir back into the meat. Add your favorite BBQ sauce and stir it in.

Leave the crock pot on warm until ready to serve.


BBQ chicken:

*If you start with frozen chicken breasts, put them in the crock pot on high with a small amount of water, until they have warmed enough to cut up, about 1-1 1/2 hours. Then follow the directions as written.

Cut the chicken into smaller chunks.
Put it in the crock pot with the other ingredients except the BBQ sauce, and set the crock pot on low. Stir chicken periodically. Add water if the mixture seems dry.

Once it becomes soft enough to shred, after about 3 hours, put in a strainer over a sauce pan. Let the liquid drain off. Shred the chicken and return it to the crock pot.

Simmer the liquid until desired consistency. Check the flavor and make any adjustments.

Stir the liquid and chicken back together in the crock pot. Add your favorite BBQ sauce and stir it in.

Leave the crock pot on warm until ready to serve.

Notes

*1 You can substitute tomato sauce, tomato paste, or even ketchup in a pinch. You will probably need to adjust the amount you use.
