Sweet Potatoes in Orange Cups

Ingredients

About 2 pounds of sweet potatoes

4 tablespoons butter

2-3 tablespoons brown sugar

1/2 cup evaporated milk

1/2 teaspoon kosher or sea salt

4-5 oranges

mini marshmallows (optional)

Description

If you plan to make these 1-2 days ahead, line them up in the pan, leaving off the marshmallows. Cover with plastic wrap and refrigerate.

Directions

Preheat oven to 400 degrees. Wash the sweet potatoes and wrap in foil.
Place a sheet tray in the oven and bake for 1 hour or until soft.

Let cool enough to handle and peel off the skins.
Mash them with butter, brown sugar, evaporated milk and salt until creamy and fluffy.

Cut the oranges in half and slice a very thin disk from the bottom so they rest flat.

With a pairing knife cut around the inside of the orange removing the inside. You may want to put your oranges half in a small "boat" of foil.

Fill each orange cup with sweet potatoes and top with several mini marshmallows or large marshmallows cut into pieces. Put them in a baking dish.

Preheat oven to 350 degrees.

Place on a sheet tray and bake for 20-25 minutes. If refrigerated, bake for 20 minutes, check to see if hot through, bake longer if needed. Top with marshmallows and bake another 15-20 minutes.
