Welsh Rarebit

Ingredients

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 1/8 cup heavy cream

1/8 cup white wine or beer

1 1/2 cups sharp cheddar, shredded

Extra cheddar for sprinkling

2 drops hot sauce

4-8 thick slices bread, depending on size

Butter, very soft

Description

A great way to use up bread when you have a lot of it.

Directions

In a medium saucepan over low heat, melt the butter and whisk in the flour. Cook, whisking constantly for 3 minutes, being careful not to brown the flour.

Whisk in the mustard, Worcestershire sauce, salt, and pepper until smooth. Whisk in the wine or beer.

Slowly pour in the cream and whisk until well combined and smooth.

Gradually add the cheese, stirring constantly, until cheese melts and sauce is smooth. Add hot sauce.

Line your bread slices up on a baking sheet and brush generously with butter. Broil until lightly golden. You may want to flip them and broil the other side too.

Sprinkle cheese onto the slices and broil until browned.

Put bread on plates and spoon cheese sauce over.

Optional sides:
Fried tomatoes, salad, or tomato soup. Fried onions, mushrooms, potatoes, diced tomatoes, and bacon. Steamed broccoli.
